The Recipe
Tofu sloppy joes are great on buns, but most any bread or starch will work. Pour them over rice, potatoes, steamed broccoli.
Ingredients
- 18 blocks of firm tofu 1
- 41 yellow onions
- 4 bell peppers
- 1/2 cup oil
- 1 cup brown sugar
- 1/2 cup yellow mustard
- 1/2 cup worchestershire sauce (VEGAN) 2
- 1/2 cup apple cider vinegar 3
- 174oz of tomato sauce - about 6 29oz cans
- 1/2 cup nutritional yeast (optional) 4
Directions
- Prepare the tofu
- This will likely take several batches. Leave tofu refrigerated after it has been pressed and while waiting to press the rest.
- Once all blocks are nearly pressed, preheat oven to 375f
- Either crumble by hand or use a cheese grater to shred the tofu into a full sized serving pan
- Bake for 40 minutes, stirring around half way through. This will help the tofu get a meatier texture and absorb more sauce.
- Make the sauce
- Dice the onion and bell peppers
- Pour oil into large pot, set to medium heat
- Sautee the bell peppers and onion until soft
- Add brown sugar, worchestershire sauce, mustard, vinegar, tomato sauce - and nutrional yeast if you are using it.
- Turn the heat up, bring it to a boil, stirring often
- Reduce heat, simmer ~10 minutes, stirring one or two more times.
- Combine
- Split the baked tofu evenly into two pans
- Pour the sauce evenly over both pans
- Stir each pan thoroughly
